Oatmeal Slices with Mixed Fruit and Nuts
Makes 18 to 24 pieces.
INGREDIENTS
- 100g coconut oil (or equivalent)
- 50g raw sugar
- 25g treacle (or honey, golden syrup or more sugar
- 1 egg (or vegan replacement)
- 1 teaspoon vanilla extract
- 100g plain flour (or gluten-free alternative if desired)
- ½ teaspoon ground cinnamon
- ½ teaspoon baking powder
- (optional) pinch of other spices, e.g. ginger, nutmeg, star of anise
- ½ teaspoon salt (less if desired)
- 50g almond meal
- 75g raisins, sultanas, cranberries, prunes, or other dried fruit
- 50g crushed walnuts, pecans, or other nuts (or mixed nuts)
- 125g oats
- (optional) up to 50g shredded coconut for extra coconut flavour
METHOD
- Preheat the oven to 180°C (165°C fan-forced).
- Beat the coconut oil, sugar and treacle (if using) together until light and fluffy.
- Beat in the egg (or vegan replacement) and add vanilla extract until well combined.
- Combine the flour, baking powder, salt and cinnamon (and other spices if desired), then add to mixture.
- Add the remaining ingredients and stir well.
- Fill a lined baking/brownie tray and bake for 20-25 minutes until nicely browned.
- Allow to cool on the baking sheet until they are firm enough to cut into smaller squares or rectangles.
- (Optional) Return slices to oven at a reduced temperature for more crunchiness.
